I had this question in mind when doing the taj mahal ring quest, How much does the stats add up to the attack power, is it better to get a ring with high strength which adds attack power or a ring which adds more attack power and lesser strength stats

Attack from stat depends on your main type
Melee-str
Range-dex
Magic-int

And then the attack power is just straight out attack power. As for the mechanics on how stats correlate to how much added, I've not paid much attention. Perhaps, if you have str rings, try and equip/unequip and see the change on your atk.

strength adds damage to a melee mercenary, dex adds damage to a ranged mercenary, and int adds damage to a staff mercenary. if an item flat-out says it adds X amount of damage, than that is added directly to your damage total

Rings are best to be used as another defensive tool in most cases. Class rings of both levels have a ring targeted at magic defense. Which is often best route for non-shaman mains. Of the level 50 class rings I often suggest "Pearl Ring of Determination" for its magic defense and rounded in pdef value. At the level 80 tier I often suggest "Spearmaster's Ring" for its all around defensive attributes which become very viable.

is better to get m def ring if you are a melee class due to their mdef is so low.

I believe its viable to equip them with rings that adds m.def for melee since they have low m.def. But another way is to hide them behind holyguard or place them on the middle row then equip them with pearl rings of destruction which further makes them a beast.
